Triple Chocolate Biscotti

2 ½  c. flour

1/3 c. cocoa powder

2 tsp. baking powder

1/2 tsp. salt

1 c. sugar

6 T. (3/4 stick) unsalted butter

3 large eggs

1 1/2 tsp. vanilla extract

8 oz. (1 1/3 c.) chocolate chips

1/2 c. white baking chips

Beat sugar and butter to blend, beat in eggs, vanilla, flour and other dry ingredients.  Stir in chips.  Drop dough onto greased cookie sheet (or Silpat baking sheet)  in 2 11" long strips, spacing 3" apart.  Shape into 11"  x    2 1/2" logs.  Refrigerate 30 min.

Heat oven to 350 degrees.  Bake logs until tops are cracked and dry and tester in center comes out clean, about 25 min.  Cool 10 min.  Reduce oven temperature to 300 degrees.  Cut warm logs crosswise into 1/2" thick slices.  Arrange cut side down on baking sheets.  Bake 8 min, until dry to touch, turn over, bake another 8 min.  Cool on sheets.

Molasses Sugar Cookies

3/4 c. shortening

1 c. sugar

1/4 c. molasses

1 egg

2 tsp. baking soda

2 c. flour

1/2 tsp. ginger

1/2 tsp. nutmeg

1/2 tsp. cloves

1 tsp. cinnamon

1/2 tsp. salt.

 

Mix and chill. Form into 1" balls, roll in granulated sugar. Bake 2" apart on greased sheets. 375 degrees, 8-10 minutes.

 

Cashew Orange Biscotti

1 1/2 c. roasted cashews (or pecans)

2 c. flour

1 c. sugar

1 tsp. baking soda

1/4 tsp. salt

4 large eggs

1 T. freshly grated orange zest

1 tsp. vanilla

1 tsp. water

Preheat oven to 300 degrees and grease a large baking sheet.  Chop cashews coarsely.  Beat 3 eggs, zest and vanilla until combined.  Beat in flour, sugar, baking soda and salt until stiff dough is formed.  Stir in cashews.  In a small bowl, beat together water and remaining eggs to make an egg wash.  Form dough into two 12" long logs on cookie sheet and flatten slightly. Brush logs with egg wash.  Bake in middle of oven until golden, about 50 min.  Cook logs on baking sheet on rack for 10 min.  Using serrated knife, cut logs diagonally into 1/3" slices.  Arrange cut side down on baking sheet and bake in middle of oven until crisp, about 15 min.  Cool on rack, store air-tight.

 

Oatmeal Raisin Cookies

Cream 3/4 c. shortening with

1 c. sugar.  Add

2 eggs

1 c. & 2 T. flour

1 tsp. baking powder

1/4 tsp. salt

1/3 c. milk

1 tsp. cinnamon

1 tsp. vanilla

1 c. raisins

3 c. rolled oats

Drop by teaspoonfuls on greased cookie sheets, bake at 375 degrees for 15 min.

Chocolate Chip Cookies

Cream (or melt) 1 c. (two sticks) margarine with

3/4 c. brown sugar

3/4 c. white sugar

Beat in 2 eggs

1 tsp. vanilla extract.  Stir in

2 1/4 c. flour

1 tsp. baking soda

1/4 tsp. salt.  Add

12 oz. (2 c.) chocolate chips

Drop on greased cookie sheets, bake at 350 degrees, bake 9 - 11 min. Cool on baking sheets 2 min. before removing to racks.
